Ingredients

Dough

  • 1½ cups (6 oz.) 350 ml (170 g) mozzarella cheese, shredded
  • 2 tbsp 2 tbsp cream cheese
  • 1 1 eggeggs
  • 1 cup (4 oz.) 240 ml (110 g) almond flour
  • ¼ cup (1¼ oz.) 60 ml (32 g) powdered erythritol
  • 2 tbsp 2 tbsp coconut flour
  • 1 tsp 1 tsp white wine vinegar
  • ½ tsp ½ tsp baking soda

Filling

  • 4 oz. 110 g butter, softened
  • 1 tbsp 1 tbsp ground cinnamon
  • ¼ cup (1¼ oz.) 60 ml (32 g) powdered erythritol

Icing

  • ¼ cup (1¼ oz.) 60 ml (32 g) powdered erythritol
  • 1½ tbsp 1½ tbsp water

Making low carb simple

Instructions

Instructions are for 12 servings. Please modify as needed.

  1. Preheat the oven to 365°F (185°C).

  2. Heat mozzarella and cream cheese in a non-stick pan on medium heat or in a bowl in the microwave oven. Stir until they melt together. Add the other ingredients and mix well. Tip: use a hand mixer with dough hooks.

  3. Roll out the dough between two pieces of parchment paper with a rolling pin to a square shape about 12 x 10" (30 cm x 26 cm) that's about 0.1 " (3 mm) thick. Remove the parchment paper that's on top.

  4. Mix together cinnamon, erythritol, and butter in a bowl.

  5. Spread the butter mixture carefully on top of the dough with a spatula.

  6. Roll up the dough tightly into a log using parchment paper (the same technique as when you make sushi rolls). Put the log in the fridge for about 20 minutes to firm up so the rolls will keep their shape when cutting.

  7. Cut the log into 12 pieces with a sharp knife. Put them in a baking dish (that is big enough just to fit all the buns) lined with parchment paper or into individual cupcake liners. Bake in the oven for about 10-12 minutes or until golden. Let them cool.

  8. Mix the powdered erythritol and water with a small spoon in a bowl or glass. Drizzle the cinnamon rolls with the icing and let the icing harden for a couple of minutes before serving.

    Hi, Valeh! If following the standard recipe, they shouldn't be big. Did you let the dough roll chill in the fridge before baking them?

    We have not tested these in this recipe, but in general, some people see success with keto baked goods with hazelnut flour or sesame seed flour in place of almond flour. Sometimes they can be denser though.

    Coconut flour absorbs much more moisture; you would need to use less but then you wouldn't have the volume of dry ingredients needed.

    The same thing happened to my buns as Valeh’s. I left the dough for a full 30 mins in the fridge but I didn’t have a ‘just big enough’ pan - the smallest I had was too small so I had to use a baking sheet. I’ve just taken them out of the oven and they smell delicious. I’m sure the fact they’re fairly flat won’t make them taste any different, lol. On my shopping list is a ‘just big enough’ pan for next time :)

    You can use your preferred sweetener. As long as it says that it measures 1:1 with sugar in sweetness, you can use the same amount listed in the recipe. If it says that it's 2X as sweet, just use half and adjust to taste.

    We have not tested this recipe with red wine vinegar. The taste might be different.

    Omg these are so good, they look, taste and smell amazing and I haven't even got as far as putting the icing on. I made the mistake of melting my cinnamon butter too much so when I rolled up the dough it splurged out the sides. But I compensated for this by smearing a little of the butter on the top once I'd sliced the rolls up, this resulted in the roles looking browner when they came out the oven. Also cooked them for longer than recommended. Must not eat them all!

    I REALLY want to make this but I'll have to buy several things that, to me, are exotic ingredients. I'm willing, but what if I don't have dough hooks? I don't think I can just pick up a set of them somewhere and be able to trust that they will fit my mixer. Do I just have to have them? If not, what is the alternative method?

    Hi, Ann! The mixer isn't required. You can manually mix, but it will be a bit of effort.

    The ounce is a measure of weight while the cup is a measure of volume. Different ingredients have different weight and densities so there is no standard conversion amount to get volume from weight. You can use either the volume or the weight measurement for any of the ingredients, whichever makes the most sense for you.

    The granulated sweetener may remain a little gritty but should work apart from that.

    The most likely issue would be not mixing the dough thoroughly enough after adding the vinegar.
