onion curry recipe | stuffed baby onion sabji recipe | bhareli dungri nu shaak with detailed photo and video recipe. perhaps one of the simple and basic north indian or western indian curries made with baby onions and some masala to stuff it. it is an ideal gravy based curry suitable for any kind of soft or hard roti’s/bread, but can also be served with rice too. generally, it is prepared with baby onions or shallots and the spice mix is stuffed inside the slit onions, but it can also be done with regular red onions.

onion curry recipe | stuffed baby onion sabzi recipe | bhareli dungri nu shaak with step by step photo and video recipe. preparing some yummy gravy based curries is always a tricky job. it’s tricky not because of the recipe but to choose what to prepare for a particular day. you may have premium curries like paneer or kofta’s but that does not come with the easy recipe too. to solve this problem, you may choose basic vegetables like onion and tomato and prepare one of the tasty stuffed curries which are also known as onion curry recipe.
as i was explaining earlier, if roti or chapati is your staple food for lunch and dinner, than you may have faced this question of what curry to prepare? the demand is always for something in gravy and also a tasty one too. moreover, if you prepare the same paneer or mix vegetable curry, it can be monotonous too. to solve this problem, i am suggesting this wonderful stuffed onion curry. basically, the baby onions are slit-like eggplant or in an ‘x’ form at the bottom and the dry spices are stuffed to it. later these stuffed onions are cooked eventually in a tomato and onion sauce to get the rich and creamy gravy sauce. in a nutshell, you would feel the curry very similar to bharli vangi or eggplant, but the use of baby onions would produce a totally different curry altogether. in addition, i have also added thick and creamy yoghurt to make it even more juicy and creamy.
furthermore, i would like to add some more additional tips, suggestions and variants to stuffed onion curry recipe. firstly, the curry is not just limited to baby onions or shallots, but can also be made with any sized onions. the preferred one is shallots. as a matter of fact, you can also make this recipe with any other desired vegetable like brinjal, baby potatoes and zucchini. secondly, if you prefer to have thicker curry base, you can add 1-2 tsp of besan with yoghurt. i do not prefer it that way, but can be added. lastly, when you add the curd or yoghurt ensure to whisk it properly before you mix it the hot curry base. otherwise, it can easily curdle and may not get the desired creamy and silky texture.

Ingredients
for onion stuffing:
- 15 small onions
- ¼ tsp turmeric
- ½ tsp chilli powder
- ½ tsp garam masala
- ½ tsp salt
for curry:
- 2 tbsp oil
- ¾ tsp mustard
- ½ tsp cumin
- pinch hing
- few curry leaves
- 1 onion, finely chopped
- 3 clove garlic, sliced
- 1 inch ginger, chopped
- ¼ tsp turmeric
- 1 tsp chilli powder
- 1 tsp coriander cumin powder
- ½ tsp garam masala
- ½ tsp salt
- ½ capsicum, cubed
- 1½ cup tomato puree
- ¼ cup curd, whisked
- ½ cup water
- ½ tsp kasuri methi, crushed
Instructions
how to stuff onions:
firstly, slit 15 small onions marking x in centre.
add¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt.
mix well coating the spices to onions. rest for 15 minutes.
pyaz ki sabji preparation:
firstly, in a large kadai heat2 tbsp oil, splutter ¾ tsp mustard, ½ tsp cumin, pinch hing and few curry leaves.
add1 onion, 3 clove garlic,1 inch ginger.
saute well until onions turn golden brown.
now add¼ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander cumin powder, ½ tsp garam masala and ½ tsp salt.
saute on low flame until the spices turn aromatic.
add½ capsicum and saute for a minute.
further add1½ cup tomato puree and cook well. to prepare tomato puree, blend 2 large tomatoes in a blender.
cook until the oil separates.
further add¼ cup curd and continue to cook on low flame until the oil separates.
now add ½ cup water and mix adjusting consistency as required.
add in the stuffed onions and give a good mix.
cover and simmer for 8 minutes or until the onions softens and absorbs masala.
finally, add½ tsp kasuri methi and enjoy onion curry with roti.

- also, if you are not having access to small onions, then you can cube the large onions and use.
- additionally, cook the curry until the oil separates from the side.
- finally, onion curry recipe tastes great when prepared spicy.
