In situations like this, sometimes you just need a giant fluffy pancake to get you through the day.

And with Easter around the corner, it seems bizarre not to have something lined up in the food department.

To be quite honest, I didn't even know it was Easter this week. Whoops?

I guess that's what happens when you're super pregnant during a pandemic and trying to just live in the moment.

But anyways, as soon as I heard, I knew I wanted to share a recipe that would not only look amazing but would taste even better!

The most glorious part about the dutch baby is how incredibly easy it is to make. The only two things that you really need to remember is to start with a hot pan and to have your ingredients be room temperature.

How to make a dutch baby

The first time I made a dutch baby, I was blown away by how easy it was. To me, they always seemed hard to achieve but they're not!

The most important thing you need to remember is that the batter mixture should be room temperature so that the dutch baby rises as high as possible.

You'll also NEED to start with a hot pan to cook it in! I recommend sticking your cast iron in the oven while it preheats to 400F degrees which is ample time to get it the perfect temperature.

If you don't have a good cast iron, you can use a nonstick oven-safe pan like this one.

As the oven is heating, prep the batter. Add milk, eggs, vanilla and white sugar to a blender (or food processor) and blend for 30 seconds. Add flour and blend for another 30 seconds.

If you don't have a blender, you can whip it by hand - just be sure to whip it good!

Now pull the pan out of the oven and add butter. It should be hot enough that the butter melts instantly but doesn't burn. If it’s not melting, stick it back in the oven with the butter until it does.

Before adding the batter to the buttered pan, blitz the blender one more time then immediately pour it in. Stick it in the oven and let it cook for 25 minutes.

How to make bananas foster

As the Dutch baby is cooking, you'll want to make the bananas foster.

When there's ten minutes left of cooking, melt the butter in a pan over medium heat.

Now add brown sugar, cinnamon, and vanilla extract and stir it once. Let the mixture start to bubble and simmer - don't be tempted to stir though!

Once it's bubbled for a minute or two, add the bananas and stir or toss until they're covered!

Then add the rum and let it continue to bubble and cook out. After 2 minutes, turn the heat down to a simmer and add the orange juice.

Let the bananas foster simmer and reduce until dutch baby is ready.

And lastly, once the dutch baby has cooked for 25 minutes, take it out of the oven and let it cool for 5 minutes.

Before serving, top with ice cream and bananas foster mixture and serve immediately.

Other toppings ideas

If you're not into bananas foster, I've got some more tasty topping ideas for ya!

The most common topping is probably a squeeze of fresh lemon juice with powdered sugar and fresh berries. It's simple yet delicious.

Besides bananas foster, one of my personal favorites is fresh chopped strawberries with a drizzle of nutella.

You could also make it savory with melted brie and seared ham.

What to pair it with

With easter right around the corner, I would recommend pairing this with these gorgeous Japanese style egg salad sandwiches, these asparagus and goat cheese puff pastries, or this savory crock pot brown sugar pineapple glazed ham recipe.

And if you make the ham, you can use the leftovers on these easy southern belle funeral sandwiches!

If you want more inspiration for sweet dishes, try this easy strawberry dump cake (perfect quarantine recipe because it's all pantry staples!), this salted caramel churro french toast, or these puff pastry cinnamon rolls!

If you need a celebratory co*cktail, you MUST make these easter bunny espresso martinis!
