I know, I know… You’re thinking to yourself, “Those are NOT cookies!” And before I tried them, I was a little bit hesitant to give them that title too. But you know what? These apple slice cookies taste AMAZING. Seriously, I was shocked. I’m the first person to grab a bag of chips before I’d grab an apple, (Mmmm… chips…) so trust me when I say these are just as good as a baked cookie, or maybe even better?

And they havetwo very important benefits over regular cookies –

1. They’re actually good for you!And,

2. You don’t have to bake them, so they’re super quick to throw together.

Just let me call themno-bake cookies. You’d enjoy a no-bake cookie, right?? Loaded with healthy protein that will keep you full? Mmmmm…

I think my favourite thing about these guys is the coconut. I bought the sulfate free, unsweetened coconut flakes from the bulk store, and they taste sooooooo good! Not that I know what sulphates are, but the sulfate free ones had such a beautiful and natural flake shape, that I wanted to try them.

I got the recipe idea for these apple slice cookies fromRachel Schultz and instantly thought they’d make the best afternoon snack ever. She adds one more ingredient (Don’t forget toclick over to her website to see what it is), but I was trying to keep it as simple as possible. I made them yesterday for the first time, and I’ve already made a second batch. Seriously. So good!

Apple Slice Cookies

The full printable recipe is at the bottom of this post, but here’s what you’ll need:

  • Red Delicious Apples
  • Peanut Butter
  • Unsweetened Coconut
  • Mini Chocolate Chips
  • Chopped Walnuts
  • Lemon Juice (optional)

You’re going to want a nice, firm apple for these cookies. The red delicious apples held up really well without bending or flexing, even when I sliced them into thin pieces.

Slice the apples into 1/4″ slices using a large, sharp knife. The larger the knife, the better control you’ll have and you’ll be able to slice through the apple without ruining your slice. I used my Jamie Oliver Santoku Knife for it. I got it free at my grocery store last year with some points and I LOVE that knife. It’s so awesome when you need to make large, thin slices!

If you’re worried about the applesturning brown, you can toss them in a zip lock bag with a small squirt of lemon juice. I went back for some leftover slices about 8 hours later and the apples in the bag still hadn’t turned brown at all, even though they were sitting in the bag on the counter all day.

Now, being the master chef that I am, I realized that I don’t actually own an apple corer. I checked three stores, and I couldn’t find anyone with an apple corer in stock, so I had to improvise. Please behold, my Super Professional Kids Play-Dough Rolling Pin (seriously) Apple Corer. What can I say, I was in a pinch. But it totally worked.

Set your apple slices onto a sheet of paper towel, and then gently press the tops with another paper towel to soak out any excess moisture.This will make it easier to get the peanut butter to stick.

Spread a thin layer of peanut butter onto each of the apple slices. Or a thick layer. It’s up to you.

Then generously sprinkle on the coconut, and add the walnuts and chocolate chips.

I was wondering why I liked these so much, but I just realized they’re made with peanut butter and chocolate! One of my favourite combinations!

Apple Slice Cookies | A Perfect Afternoon Snack Recipe

The perfect afternoon snack!

Ingredients

  • 1 Red Delicious Apple
  • 1/4 cup Peanut Butter
  • 1 to 2 Tablespoons Unsweetened Coconut Flakes
  • 1 to 2 Tablespoons Chopped Walnut Pieces
  • 1 to 2 Tablespoons Mini Chocolate Chips
  • Lemon Juice optional

Instructions

  • Cut the core from the apple (or cut out the cores from each piece after slicing).

  • Slice the apple into 1/4 inch slices using a large knife.

  • Optional - If you're worried about the apples turning brown, place the slices in a zip lock bag and toss with a squirt of lemon juice.

  • Set each of the apple slices onto a sheet of paper towel and blot the tops dry with another paper towel.

  • Spread a layer of peanut butter on each apple slice.

  • Then top with a generous amount of coconut flakes, and some walnuts and mini chocolate chips.

  • Enjoy!
